Grilled Portobello Stuffed Mushrooms with Cheese Recipe

Grilled portobello mushrooms are stuffed with a delectable mixture of melted mozzarella and grated Parmesan cheese. The marinade of balsamic vinegar and olive oil adds another layer of flavor to these savoury and satisfying stuffed mushrooms.

  • Prep Time: 15 minutes
  • Cook Time: 15 minutes
  • Total Time: 30 minutes

Instructions

  • Preheat the grill to medium-high.
  • Remove the mushrooms' stems and gills.
  • Whisk together the balsamic vinegar, olive oil, salt, and black pepper in a small bowl.
  • Brush the mushroom caps inside and out with the balsamic mixture.
  • Grill the mushroom caps for 4-5 minutes, stem side down.
  • Grill the mushroom caps for another 4-5 minutes, or until tender.
  • Remove the mushroom caps from the grill and stuff them with shredded mozzarella and grated Parmesan.
  • Return the mushrooms to the grill for another 2-3 minutes, or until the cheese is melted and bubbling.
  • Before serving, garnish with fresh parsley.
