BBQ Whole Eggplant Recipe

This BBQ Whole Eggplant recipe is a quick and easy way to prepare eggplant. Grilled aubergine is combined with garlic, olive oil, lemon juice and spices to make a flavorful dip. It's ideal for summer cookouts or as an appetiser for any event.

  • Cook Time: 40 minutes
  • Total Time: 50 minutes

Instructions

  • Preheat the grill to medium-high temperature.
  • Prick the aubergine all over with a fork and grill it.
  • Cook, turning occasionally, for 30-40 minutes, or until the skin is charred and the flesh is tender.
  • Remove the aubergine from the grill and set aside for a few minutes to cool.
  • Scoop out the flesh from the aubergine by cutting it in half lengthwise.
  • In a mixing bowl, combine the garlic, olive oil, lemon juice, smoked paprika, cumin, salt, and pepper.
  • Garnish the aubergine dip with fresh herbs and serve.
