BBQ Peeled Hasselback Potatoes with Bacon Wrapped in Tin Foil are a tasty and simple side dish for any BBQ or outdoor gathering. The bacon gives the potatoes a smoky flavor, and the garlic butter mixture keeps them moist and tender.

  • Prep Time: 15 minutes
  • Cook Time: 40 minutes
  • Total Time: 55 minutes

Instructions

  • Preheat the grill to medium-high temperature.
  • Crosswise slice the peeled potatoes at 1/8 inch intervals, being careful not to cut all the way through.
  • Wrap a slice of bacon around each potato.
  • Melt the butter in a small saucepan and add the minced garlic.
  • Cook until the mixture is fragrant.
  • Brush the garlic butter mixture over the potatoes, making sure to get in between the slices.
  • Season the potatoes with salt and pepper, and top with a sprig of thyme.
  • Wrap each potato in tin foil, making sure to seal the foil tightly.
  • Cook the foil-wrapped potatoes on the grill for 35-40 minutes, or until they are tender.
  • Remove the foil and carefully unwrap it from the grill.
  • Serve immediately and enjoy.
